Coffee Facts: Freshly roasted coffee will continue to release small amount of carbon dioxide gas for 72 hours or longer. Freshly packaged and sealed coffee will need a release valve for the gas to escape. Oxygen is the main culprit which stales coffee. Once the sealed coffee package is opened, keep the content in an air tight container and refrigerate. Return chilled coffee to room temperature before brewing.
